When we switched to a Paleo diet, one of the things I missed the most was mashed potatoes. But then I discovered mashed cauliflower and my problem was solved!
Mashed cauliflower is even more flavorful than mashed potatoes and cauliflower is extremely good for you. It is perfect alongside some meat with paleo gravy.
This excellent and simple recipe is from the wonderful blog, Pretty Little Paleo.
Ingredients:
A head of cauliflower (Tip: you can find organic cauliflower at Target!)
2 cups of chicken stock
4 sprigs of fresh rosemary or a teaspoon of dried rosemary
5 cloves of garlic, peeled
Directions:
Cut the leaves off the cauliflower, cut into large chunks, and place in a large pot with the garlic and rosemary. Cover it all with chicken broth and simmer for about 15 minutes, checking regularly to make sure it doesn’t boil dry. Remove cauliflower and place in Vitamix or food processor. Blend until it is smooth.

Do you strain away the liquid before you put it in the VitaMix? Or does the liquid go in as well?
It depends on the consistency you want. I usually use a couple of spoonfuls of the broth because it gets it nice and smooth.
