A huge part of CrossFit is fueling your body in a healthy way, and so we are hoping to share recipes here that may give you some healthy meal ideas.
Here is a tasty recipe for meatloaf that substitutes almond meal for the more commonly used breadcrumbs. Almond meal can be found pretty easily at most stores these days. I get ours in the health foods section of Cub foods.
Meatloaf
1 diced red onion
2 lbs of grass fed ground beef (or a combo of this and bison meat)
1 cup almond meal
2 eggs
1 small can tomato paste
1/2 tbsp salt
1 tbsp crushed garlic
2 tbsp dried basil
1 tsp marjoram
cracked black pepper to taste
Mix all ingredients by hand in a large mixing bowl. Put mixture into a large glass baking pan and form into a loaf (tip: I place a baking sheet under the meatloaf pan, as sometimes it bubbles over while in the oven). Bake at 350 degrees for about an hour and a half, or until meat is no longer pink in the middle and a nice crust forms on top.
