Here is a great and easy “no recipe” recipe for making Paleo-friendly chili. Start by browning 2 pounds of ground meat. I usually use a combination of bison and grass-fed ground beef (I also drain any excess fat from the pan). Add in an onion and cook together for a few minutes. Next, add a few fresh or a large can of diced tomatoes, as well as enough water to cover the meat. Add whatever spices you like next. I usually use about 4 tablespoons of chili powder, a teaspoon of cumin, and a teaspoon of oregano. Simmer for an hour or two until all the flavors have come together and the meat is tender.
This recipe is a great way to use up any leftover summer veggies you may have on hand as well. I’ve added zucchini, carrots, and other veggies—they’ve all worked well.
You can make a big pot of this on the weekend and have meals for the whole week!
